This is a family favorite. It’s not necessarily a holiday cookie. I remember Mom making them more during the summer and fall.
1 cup butter or margarine, room temperature
1 ½ cups sugar
1 tsp. baking soda
1/4 tsp. salt
2 3/4 cups flour
4 tbsp. sugar
4 tsp. cinnamon
Mix together butter, sugar and eggs; beat in mixer until light and fluffy. Sift together soda, salt and flour. Add dry ingredients to mixer bowl. Chill dough slightly for easier working.
In a small bowl, mix the 4 tbsp. sugar and cinnamon.
Drop dough by spoonfuls (you decide how big a spoonful is) into cinnamon/sugar mixture. Place on ungreased cookie sheet. Bake at 400o for 8-10 minutes, or until cookies are lightly browned, but soft.
