Mandy Murphey’s Sweet Potato Casserole

My mother makes this each Thanksgiving at our family gatherings in Princeton, Ky. It’s easy and you can make it the day before your meal.

Sweet Potato Casserole

3 cups mashed cooked sweet potatoes
1 cup sugar
1/4 cup milk
2 eggs
1tsp vanilla
1/2 cup margarine
1 cup coconut

Mix all ingredients. Place in casserole dish.

Topping:

1 cup crushed pecans
1 cup brown sugar
1/2 cup margarine
1/2 cup all purpose flour

Mix ingredients and spread over top of potato mixture

Bake at 350 for 1 hour.
