(KTVI) – Cindy Brenneke from Iron Works Fitness showed Tim that not all salads are created equal. Between the cheese, dressing and extra toppings, what appears to be healthy can total up to hundreds of calories.
Cindy showed us an easy-to-make salad filled with fresh, seasonal flavors and it is ONLY 74 calories!
Skinny Strawberry Salsa Salad
2 cups fresh strawberries, chopped
2 tablespoons chopped red onion
1 1/2 tablespoons balsamic vinegar
1/4 teaspoon ground black pepper
1 tablespoon chopped fresh mint
Juice of 1 lime
3 cups Dole baby spinach leaves
Stir together the chopped strawberries, red onion, balsamic vinegar, pepper, mint and lime juice.
Allow flavors to blend for 10 minutes and serve over baby spinach.
