Hazelnut Chocolate Banana Graham
6 Square Graham Crackers – Broken into Rectangles
1 Tablespoon Hazelnut Chocolate Spread –Divided into 6 Portions
1 Banana Sliced into Quarter size pieces 1/8th” Thick
1 Tablespoon Toasted Coconut
1 Teaspoon Ground Cinnamon – For Garnish (Optional)
Spread the Hazelnut Chocolate Spread evenly on top of the Graham Crackers
Place one slice of banana on each of the Graham Crackers and a ½ Teaspoon of toasted Coconut
Garnish with Ground Cinnamon
Serve and Enjoy
Roasted Corn and Jicama Salad With Seared Shrimp
4 Ears of Fresh Sweet Corn
1 Large Jicama – Peeled and Cut into ½” x ½” Cubes
1 Ripe Avocado – Cut into ½” by ½” Cubes
1 Ripe Mango – Cut into ½” by ½” Cubes
½ Medium Red Onion Thinly Sliced
2 Tablespoons Chopped Cilantro Leaves
1 Tablespoon Quality Olive Oil
1 Teaspoon Kosher Salt
1 Teaspoon White Pepper
Place the ears of corn on a preheated grill and cook them until they begin to have grill marks and blister.
When the ears of corn have cooked, remove them from the grill and cool them in a safe location.
After shucking the outer husk off the corn place them on their end and use a sharp knife to remove the kernels from the ear of corn. Continue to rotate until all of the kernels have been removed.
Combine the Corn, Jicama, Avocado, Mango, Red Onion, and Cilantro in a large mixing bowl and toss in the olive oil, kosher salt, and white pepper.
Place in a serving dish and enjoy!
Guilt Free Queso Dip
1 Pound Ground Turkey Meat
2 Cups Low Sodium Fat Free Salsa (Drained)
1 Cup Plain Greek Yogurt
1 Cup Shredded Cheddar Cheese
1 Package Low Sodium Taco Seasoning
1 Bunch Sliced Green Onions for Garnish (Optional)
Brown the Seasoned Turkey Meat in a small pan until the protein reaches an internal temperature of 165 degrees F.
Drain the excess grease off of the Turkey Meat using a colander and paper towels.
Place the Turkey back into the pan and add the Greek Yogurt and Fat Free Salsa.
Heat the mixture until it begins to simmer and incorporate the cheese into the mix.
Transfer the dip into a serving dish and garnish with the sliced Green Onions.
Serve with Corn or Pita Chips.
