Sweet Potato Project partners with SLU food sustainability

ST. LOUIS (KTVI) – Sylvester Brown, Director of the Sweet Potato Project, has announced a partnership with St. Louis University that will take the Sweet Potato Project to the next level.

Currently the project teaches public school students how grow food in north St. Louis. The partnership will give The Sweet Potato Project access to SLU’s Department of Nutrition Dietetics and Food Innovation and Entrepreneurship program, to further educate students on large sale food production in north St. Louis and food sustainability.

Students are set to harvest this year’s crop of sweet potatoes on Saturday, October 12, taking the potatoes to SLU’s Salus Center teaching kitchen, to be made into sweet potato cookies.

The cookies will be made under the supervision Chef Steve Jenkins, Assistant Professor and director of SLU’s Food Innovation and Entrepreneurship program.
