Dominic’s makes “Most Romantic Restaurant” list

ST. LOUIS, MO (KTVI) – Dominic's on The Hill was named one of the "Top 100 Most Romantic Restaurants in America" by the website "open table."

Chef Giovanni "Dominic" Galati made one of his favorite pasta dishes for Elliot Weiler: Rigatoni Amatriciana.

Dominic’s Rigatoni Amatriciana

Serves 4 People

Ingredients

1 lb. Rigatoni Pasta
1 Small onion chopped
3 cloves of chopped garlic
6 Tbsp olive oil
8 oz. Pancetta (Italian Bacon)
Pinch of Red Pepper
1 oz. unsalted butter
¾ cup dry white wine
2 pinches of parsley
22 oz. canned peeled whole tomatoes chopped
1 cup Parmigiano Cheese
Salt and Pepper to taste

Preparation of the Sauce:

In large skillet, heat olive oil.  Sauté onion, pancetta and garlic for about 7 minutes.  Add wine and let cook for another 2 minutes.  Add tomatoes and the rest o the  ingredients cook for about 15 minutes.

In a medium pot, boil pasta in salted water for about 8 minutes or until firm.  Strain, toss in the sauce and add of the cheese.  Set on a platter.  Sprinkle over the parsley and the other half of the cheese and serve.
