Chef Giovanni "Dominic" Galati made one of his favorite pasta dishes for Elliot Weiler: Rigatoni Amatriciana.

Dominic’s Rigatoni Amatriciana
Serves 4 People
Ingredients
1 lb. Rigatoni Pasta
1 Small onion chopped
3 cloves of chopped garlic
6 Tbsp olive oil
8 oz. Pancetta (Italian Bacon)
Pinch of Red Pepper
1 oz. unsalted butter
¾ cup dry white wine
2 pinches of parsley
22 oz. canned peeled whole tomatoes chopped
1 cup Parmigiano Cheese
Salt and Pepper to taste
Preparation of the Sauce:
In large skillet, heat olive oil. Sauté onion, pancetta and garlic for about 7 minutes. Addwine and let cook for another 2 minutes. Add tomatoes and the rest o the ingredients cook for about 15 minutes.
In a medium pot, boil pasta in salted water for about 8 minutes or until firm. Strain, toss in the sauce and add of the cheese. Set on a platter. Sprinkle over the parsley and the other half of the cheese and serve.
