BRYAN EVENTS Sweet Potato Empanadas
Two Large yams or sweet potatoes
½ teaspoon cinnamon
¼ cup of honey
2 packs empanada shells
2 cups vegetable oil for frying
Bake sweet potatoes for 1 hour.
Mash and add cinnamon and honey mix well.
Use tablespoon and put in the center of empanada shell and pinch edges together.
When all done, pan- fry empanadas lightly.
Place on pan with paper towels.
Re-heat in oven before serving.
BRYAN EVENTS Crawfish Empanadas
1 pound of cooked crawfish meat
¼ cup Worcestershire sauce
- Mix with ½ teaspoon of cayenne pepper
Use a table spoon to portion in each empanada shell and pinch edges together.
Lightly fry in 2 cups vegetable oil.
Reheat in the oven when ready to serve.
