Recipe: Lobster Salad
2 lbs. Lobster knuckle and claw meat
1 lb. Lobster tails (cooked)
2 cups of Mayo
2 cups Celery (Small Diced)
1 cup Red Onion (Small Diced)
2 Lemons (Zested)
1 Lemon (Juiced)
2 tablespoons of Tarragon (Freshly Chopped)
1 tablespoon Old Bay Seasoning
1.Clean Tails, Poach in well-seasoned water until cooked through... Shock Immediately... Chop when cooled.
2.Squeeze out any additional moisture from knuckle and claw meat to insure they don`t bleed into the salad making it watery.
3.Add all ingredients to a large mixing bowl and fold together until mixed well.
4.Place Lobster Salad in a lightly toasted hotdog bun and Enjoy!
