ST. LOUIS, MO (KTVI) - When kids walk through the door from school, they will reach for just about anything to satisfy their hunger.
Jen McDaniel with the Academy of Nutrition and Dietetics joins FOX 2 with a lesson in healthy snacking.
Banana Soft Serve
4 frozen bananas, broken into chunks (peel and break before freezing!)
½ cup plain organic Greek yogurt or milk
2 tablespoons unsweetened cocoa powder
Place the frozen banana chunks in a food processor fitted with the S-blade attachment.
Press the Pulse button until the large pieces have broken into smaller chunks, then press On and let the food processor go for about 1 minute.
Scrape down the sides, then add the Greek yogurt and cocoa powder blend another 1-2 minutes or until mixture is completely smooth and appears somewhat whipped.
Serve immediately, or remove mixture to a bowl and freeze 1-2 hours or until consistency is more like ice cream. Enjoy!
Peanut Butter, Date, & Oat Bites
makes 10-12 bites
1/2 cup peanut – or other nut – butter
1/2 cup finely chopped pitted Medjool dates, about 5 or 6 dates
1/4 cup old fashioned rolled oats
[optional additions: a tiny pinch of Kosher salt and/or ground cinnamon, a couple teaspoons of honey or maple syrup, a couple tablespoons of sunflower seeds and/or dried fruit]
In a bowl, stir together the peanut butter and chopped dates until well-mixed. Fold in the oats and mix until fully incorporated.
Using a mini ice cream scoop or small spoon, scoop out spoonfuls of the mixture and roll into balls using your palms.
Peanut Butter Honey Yogurt Dip
Yield: Serves 3-4

1 (6 oz) container plain Greek yogurt
3 tablespoons creamy peanut butter
3 teaspoons honey
1. In a small bowl, combine Greek yogurt, peanut butter, and honey. Stir until combined and smooth. Serve with apple slices or other cut up fruit.
