Holiday Ginger Strips
Ingredients 1 cup sugar ½ cup vegetable oil ¼ cup molasses or sorghum 1 tbsp. milk 1 egg 2 cups flour 1 ½ tsp. baking soda ½ tsp. salt ½ tsp. cinnamon ¼ tsp. ground ginger 1/8 tsp. ground cloves 4 tsp. sugar
Heat oven to 375o. Mix together the 1 cup sugar, oil, molasses, milk and egg. Stir in remaining dry ingredients, except 4 tsp. sugar.
Chill dough until stiff (about 1 hour).
Divide dough into fourths. Roll each portion into log 14″ long. Pat flat, to a little more than 1/2″ thick on ungreased cookie sheet or on parchment. Press fork slightly into each portion (similar to peanut butter cookies). Repeat with remaining portions, placing two logs on each cookie sheet at least 3″ apart. Sprinkle each portion with reserved sugar.
Bake 12-14 minutes, or until edges are light brown and tops appear cracked; coo 15 minutes.
Cut each strip down the center longwise, then cut each log into diagonal slices (a pizza cutter works well for this). Remove cookies to cooling rack. Store loosely covered.
