Southern Chess Pie From Kevin Steincross
This is an easy one for the Thanksgiving dessert table! Kevin Steincross says this southern favorite ‘is so sweet, you’ll kiss your grandmama!’ Enjoy!
1 stick butter (melt in microwave)
1 1/2 c. sugar, mixed with 1 T. cornmeal
1 T. vinegar (I use apple cider vinegar to spice it up)
1 t. vanilla
3 eggs, lightly beaten
Mix above ingredients and pour into unbaked pie shell.
Bake at 325 degrees for 1 hour.
I mix this by hand, not an electric mixer.
Add a generous helping of whipped cream and serve.
