(KTVI) - The heat is on and it's only going to get worse. Chef John Womick, Dean Culinary Studies at L'Ecole Culinaire, showed us a recipe to help cool you off and some tips on cooling foods.

Yellow Tomato Gazpacho with Guacamole Crema

Yellow Tomato Gazpacho:

2 lg yellow tomatoes
1 yellow sweet bell pepper
1 pint yellow cherry tomatoes
1/3 C. orange juice
2T sherry vinegar
1T cilantro
1T sriracha chili sauce
1/2 t salt
2 cloves garlic mashed
1/2 C Extra Virgin olive oil

Add all ingredients, except the oil and Puree, to a blender until smooth. Next, drizzle in the olive oil gradually. You will here a sound change as the oil emulsifies. Adjust seasonings to taste – salt, sriracha and vinegar.

Guacamole Crema:

2T guacamole
2T crema - Mexican table cream
pinchof salt
pinch of lime juice


Shrimp, Watermelon & Mango over Baby Greens with Lemongrass Cilantro Vinaigrette

Lemongrass Cilantro Vinaigrette:

2 inch pc. lemongrass peeled, smashed and steeped in 1 T rice wine vinegar
1T. cilantro
1t fresh ground ginger
2T Thai sweet chili sauce
2T lime juice
2T orange Juice
2t soy sauce
1T sesame oil
1/2 C sunflower oil

Combine all ingredients except for the oil in a blender, and set to puree or liquefy. When blended, drizzle in oils. The color will go from translucent to opaque and almost creamy.

Shrimp, Watermelon & Mango over Baby Greens:

1 pint of baby greens
1 oz. minced mango and
1 oz minced watermelon
1 oz wonton strips or one fortune cookie crumbled
1scallion sliced
watermelon pieces
mango pieces
steamed or boiled shrimp

Toss greens with 1T vinaigrette, minced melon and mango, and wonton strips. Place the mixed greens on a plate and arrange pieces of the melon, mango and shrimp on top. Drizzle with more vinaigrette and a scatter of scallions.

1 part Pimm’s #1
3 parts Sparkling Lemonade [or lemonade concentrate mixed with club soda]

Serve over ice. Garnish with strawberry and cucumber [borage and orange optional]
