Strawberry Cheesecake Santas

ST. CHARLES, MO (KTVI) – In honor of Christmas being six months away, Margie Ellisor invited Carol Hurst from Olde Town Spice Shoppe in to the studio to make some summer desserts with a Christmas twist - Strawberry Santas.

Strawberry Cheesecake Santas from The Olde Town Spice Shoppe

Whether it’s Christmas time or you need a little of the spirit of Christmas, these delicious Strawberry Cheesecake Santas are a great treat!

1 package of whole, fresh, strawberries (select the large ones!)
1 tsp vanilla extract
4 tbl powdered sugar
1 8-oz package of cream cheese (I like to use the low fat variety)
dried blueberries

Cut off the stem end of the strawberry. This will make the flat bottom for the Santa base. Then slice across about 2/3 up from the base of the strawberry. The remaining 1/3 portion, the pointy part, will be the Santa hat.

Take a dried blueberry and cut it in to 4-6 little pieces. These will be the eyes for the Santas.

Blend together the vanilla, sugar, and cream cheese. Spoon it in to a corned of a Ziploc bag and cut the corner off JUST A LITTLE.

Assembly: Put down the large strawberry base, pipe on some of the cream cheese filling, then lightly place the pointy strawberry piece on top. Adorn with two pieces of blueberry for the eyes and pipe some of the cream cheese filling on for a hat tassel and two buttons on the front. Repeat with all remaining strawberries.

Variations: Try lemon extract instead of vanilla. You can also substitute black sesame seeds for the dried blueberries.
