Vegan fruit whipped topping

ST. LOUIS, MO (KTVI) – Is there a healthy alternative to whipped cream? Monica Stoutenborough shows Tim Ezell a healthy topping from PuraVegan Cafe & Yoga.

This healthy version of whipped cream is made out of cashews and apples. Dip fresh fruit in it, or make a fruit parfait by layering fruit and topping with chopped nuts.

Whipped Cream:

1 cup sunflower seeds
1 apple, peeled & seeded
1/4 to 1/2 cup agave or maple syrup (depending on your tastes)
1 tsp vanilla
1 cup water
pinch of salt

Place all ingredients in blender and process. Slowly add water until you reach the desired consistency. It is recommended to allow it to chill in the refrigerator for 30 minutes or longer. It will thicken.

Serve as a dip for berries, or place fruit in a bowl, top with cream, then top with chopped nuts and cinnamon.
