Mardi Gras Strategies with Bryan Young Events

MARYLAND HEIGHTS, Mo. (KTVI) - Chef Bryan Young wants to help your Mardi Gras feast to be sumptuous yet civilized.
He is firing up the stove for jambalaya, traditional and vegetarian gumbo, two types of empanadas.

BRYAN EVENTS Sweet Potato Empanadas

Two Large yams or sweet potatoes
½ teaspoon cinnamon
¼ cup of honey
2 packs empanada shells
2 cups vegetable oil for frying


Bake sweet potatoes for 1 hour.
Mash and add cinnamon and honey mix well.
Use tablespoon and put in the center of empanada shell and pinch edges together.
When all done, pan- fry empanadas lightly.
Place on pan with paper towels.
Re-heat in oven before serving.

BRYAN EVENTS Crawfish Empanadas

1 pound of cooked crawfish meat
¼ cup Worcestershire  sauce
- Mix with ½ teaspoon of cayenne pepper


Use a table spoon to portion in each empanada shell and pinch edges together.
Lightly fry in 2 cups vegetable oil.

Reheat in the oven when ready to serve.
