ST. LOUIS, MO (KTVI) - Modesto Chef Carlos Hernandez recently released the restaurant's new Spring menu. Choices include Arroz Ahumado, smoked black rice with lobster, crispy pork belly and cava ailoli. Hernandez said the rice is imported from Spain an is smoked for four hours. He also said the rice is black because it is inked by calamari.
