Mediterranean Christmas Salad


  • 5-6 cherry tomatoes
  • 1 green pepper
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1 green bell pepper
  • 1 seedless cucumber
  • 3-4 mushrooms, sliced
  • 1 red onion, diced
  • 4oz gorgonzola cheese
  • 4oz dry mix of cherry, walnuts and granola
  • 6-8 shrimp
  • 5oz hickory smoked ham
  • 1-2oz butter
  • 4oz croutons
  • 4-6oz of mixed green
  • 3-5oz romaine


Heat up a sauté pan on medium heat. Sauté ham, shrimp, onions, mushrooms and peppers. Deglaze with raspberry vinaigrette. In a mixing bowl, add mixed greens, gorgonzola cheese, dry walnuts, cherry, and granola mix, croutons, tomatoes, cucumbers. Add hot topping, and you are ready to serve.
