ST. LOUIS, MO. (KTVI)- Chef Chris Larocca of Crushed Red Urban Bake & Chop Shop stopped by the Fox 2 kitchen this morning with a recipe for a tasty lobster salad the shop will be featuring until Easter.
The dish, called "Party Like a Lobstar" is a Cabo style salad. Its ingredients are listed below.
3-4 cups lettuce blend
1/8 cup fresh cilantro leaves
1/8 cup sliced red onion
1/4 cup fresh cut corn off the cob
1/4 cup crumbled goat cheese
1/4 avocado- diced
1 ounce- reconstituted lemon juice
1 1/4 ounce- organic agave nectar
1/8 cup sunflower seeds
1/2 to 3/4 cup- butter poached lobster tail meat
Chop all above ingredients into 1/4 inch pieces. Add all above ingredients and toss. Top with sunflower seeds and lobster. Serve!
