National Mushroom Day with the Olde Town Spice Shoppe

ST. LOUIS, MO. (KTVI)- Today is National Mushroom Day, and to celebrate the day Carol Hurst from the Olde Town Spice Shoppe is here with a recipe that's easy to make. The crisp roasted mushrooms  are great for snacking or as a topper to risotto or mac and cheese.

Recipe ingredients:

  • 1 lb- mushrooms (cremini preferred; oyster or shitake will work)
  • 3 tbsp- extra-virgin olive oil
  • 1 tbsp- thyme leaves
  • 1 tsp- kosher salt
  • 2 tsp- freshly cracked black pepper

Trim and quarter or slice the mushrooms in a large bowl. Add olive oil, thyme leaves, kosher salt and pepper. Place a wire cooling rack on top of a half sheet pan and spread the mushrooms. Bake at 375 degrees for 35 to 40 minutes or until the mushrooms are golden brown and crispy.
