Moore Food cooks up classic Memphis BBQ

ST. LOUIS, MO (KTVI)- Extremely talented and always entertaining Chef Georgios Kastanias joins us in the FOX 2 Kitchen this morning to highlight some of the culinary talent that works with his company Moore Food Distributors. Today Chef Georgios brought along his friend Chef Keith to show us the key to the perfect Memphis barbecue.

Memphis barbecue differs from traditional barbecue due to its dry rub. With over 20 spices, Chef Keith uses this rich blend to lock in flavor deep within the meat. The chef explains that the key to any quality barbecue is to keep things “slow and low”. Cook for several hours with a low temperature of 200 to 220 degrees to tenderize the meat and prevent dryness.
