(KTVI)-There has been a recent national push towards “meatless Mondays”. Why should Labor Day be any different?  Caryn Dugan, STLVegGirl, says you can have your burgers and potato salad and do it in a meatless and healthy way. She stopped by with recipes for black bean burgers and a roasted potato salad.

Easy Black Bean Burgers

  • 1 15 oz can of black beans
  • 1 TBS ketchup
  • 2TBS mustard (any kind)
  • 1 tsp onion powder
  • 1tsp garlic powder
  • ½ tsp chili powder
  • ¼ C flour or GF flour such as garbanzo or oat
  • 1TBS olive oil

In a large mixing bowl, mash the beans with a fork until mostly creamy – leaving a few beans intact.  Stir in the condiments and spices and continue to mix.  Add your flour and knead well.  Form your burgers (or sliders).  Heat the olive oil in a large skillet over medium heat and begin cooking your burgers.  After about 5 minutes, flip and continue to cook for 3-5 minutes; until a mild crispiness is achieved.

Top burger with a vegan mayo and hot sauce mixture!

Tapenade Smothered Roasted Potato Salad with Arugula

  • 1 sweet potato
  • 4-6 fingerling potatoes
  • 2 Red Bliss potatoes
  • 6 TBS of prepared olive tapenade, divided
  • 3TBS olive oil, divided
  • Juice of ½ lemon
  • 2TBS red wine vinegar
  • ½ red onion sliced thinly
  • 3C fresh arugula
  • s/p to taste

Preheat oven to 400°. Cut potatoes into 1” pieces – leaving the skins on. Toss with 3TBS of the tapenade and 1 ½ TBS of the oil. Spread on a baking sheet and bake for 30 minutes. Allow to cool.

In a large mixing bowl, whisk the remaining tapenade, oil, lemon juice, vinegar and salt. Add the red onion and allow to sit for at least 10 minutes. Add the potatoes and arugula and toss. Season with black pepper.
