ST. CHARLES, MO (KTVI) – It’s National Lemon Meringue Pie Day. Carol Hurst brought a great way to celebrate from Olde Town Spice Shoppe on Main Street in St. Charles – pie in a jar!
These sweet treats are great for a cookout, barbecue or any special dinner. They are great as a unique dessert, and can be lidded to take on the go.
Easy Lemon Meringue Pies in a Jar (also Gluten Free!)
1 1/2 cup granola cereal
4 tbsp butter
1 can sweetened condensed milk
1/2 cup lemon juice (approximately 2 medium lemons)
1 1/2 tsp grated lemon zest (approximately from one lemon)
3 egg yolks
1 tbsp Meringue Powder
3 tbsp + 1 tsp sugar, preferably fine/Castor
1/4 cup warm water
4 Mason jars
For the crust, grind the granola in to crumbs with a blender or food processor. Melt the butter and combine with the crumbs, and divide among the jars. Tamp down lightly with ladle and bake at 350 degrees for 10 minutes. Cool.
For the filling, combine all filling ingredients and spoon in to the jars.
For the meringue, combine the meringue powder with the warm water in a metal or glass mixing bowl and let set for 2 minutes, then begin whipping at high speed with mixer, slowly adding the sugar until stiff peaks appear- approximately 5 minutes.
Lightly spoon meringue on top of filling in jars, making sure to cover the entire filling surface area. Clean the rims with a damp cloth, removing any filling or meringue.
Bake filled jars on the oven rack in a 325 degree oven for 12-15 minutes. Cool and refrigerate.
Note: You can use your own meringue recipe with egg whites.
