ST. LOUIS, MO (KTVI) - No time to light up the grill, but still want the summer barbeque taste?

The Old Town Spice Shoppe joins FOX 2 to share a 3-ingredient healthy barbeque chicken that cooks in a Crockpot.

Today's Recipe:

Bbq Skinny Chicken with Tequila Lime Rice


Chicken Thighs (6-8 with skin removed) (can use chicken breasts or drumsticks instead)

½ cup of Magpie`s Awesome Spice Rub

1 bottle Simple Girl Carolina BBQ Sauce


Sprinkle on the seasoning so that it covers the chicken pieces. Place the seasoned chicken in a slow cooker and drizzle over the Simple Girl Carolina BBQ Sauce so that each piece has coverage. Cover the slow-cooker and bake on high for 3 hours (double the time if on low). Don`t forget to check the chicken every 30 minutes after you hit the 2 hour mark.

Serving suggestion: Serve with a summer salad and Tequila Lime Rice (Add in ½ tsp of Tequila Lime Seasoning for each cup of rice as the rice is cooking. Rice can be white or brown.)
