“Good Fortune” Dessert Mini-Taco Bar
Everything for this dessert can be made a day or two ahead and just assembled at the time needed. Great for parties, showers, tailgating, and more
24 fortune cookies
1 quart strawberries, trimmed and finely diced
1 pint raspberries, finely diced
1 cup mini chocolate chips
Strawberry cheesecake mixture
6oz block of cream cheese, softened
4 tbl butter, softened
1 pkg Wind and Willow Strawberries and Cream Cheeseball Mix
Chocolate cheesecake mixture
6 oz block of cream cheese, softened
4 tbl butter
¾ cup powdered sugar
2 tbl brown sugar
3 tbl cocoa powder
Unwrap the fortune cookies and heat in sets of two in the microwave for 40 seconds. I find that it helps to put a damp paper towel in the center of microwave, to provide some steam. Gently pry the cookies open and remove the fortune and hold a few seconds so that it cools “open”. This will be the “taco shell”. Continue with all the cookies.
Finely dice the fruit and refrigerate.
Combine ingredients for each cheesecake mixture and refrigerate. Set all components out as a self-serve dessert taco bar, or you can assemble them and serve pre-made, spooning in some of the cheesecake mixture and adding the toppings. Experiment with other toppers such as blueberries, chopped nuts, diced maraschino cherries, crushed Oreo cookies and more.
Optional: Melt dark chocolate (or white chocolate) and rim the opened cookies (before filled) with the chocolate. You can sprinkle colored sugar over the just-rimmed cookies, too. Refrigerate a few minutes for the chocolate to set. (and to REALLY kick it up a notch, sprinkle on Popping Sugar over the chocolate rims so that they "pop in your mouth"!)
