(KTVI) – J. Kim Tucci, co-owner of The Pasta House Co., talks with Tim Ezell about the restaurant’s 40th anniversary.

Recipe: The Pasta House Co. Salad
- 1 head of Iceberg Lettuce
- ½ head of Romaine Lettuce
- 1 oz. thinly sliced red onions
- ½ oz. diced pimentos
- 1/ 2 cup Artichoke Hearts
- ½ cup of Parmigiano Cheese
- 4-6 oz. Pasta House Co. Salad dressing ( 4 parts of Olive Oil blended with 1 part of Vinegar )
Break lettuce into desired pieces and chill with remaining ingredients. Add dressing, salt, pepper, and parmigiano cheese toss and serve chilled.
