ST. LOUIS, MO (KTVI)- It`s peach season over at Eckert`s! Angie Eckert visits FOX 2 News in the Morning to show us how to make a Peach Tomato Mozzarella Salad.
Peach Tomato Mozzarella Salad
2 medium homegrown tomatoes, cored and sliced
½ tsp. Kosher salt
½ red onion, thinly sliced
1 tsp. granulated sugar
2 medium peaches, peeled, sliced
2 Tbs. olive oil
1 Tbs. apple cider vinegar
8 oz. fresh mozzarella
Fresh cracked pepper
Layer tomato slices on a rimmed platter. Salt tomatoes. Top with red onion. Top with peach slices. Sprinkle with sugar. Drizzle with olive oil and vinegar. Top with mozzarella and fresh cracked pepper. Makes 4 servings.
