Sneaky ways to get kids to eat veggies

ST. LOUIS, MO (KTVI)- Getting kids to eat healthy can be a challenge. Certified health coach Pam Bredenkamp has some tricks up her sleeve that gets her grandkids to eat healthy without any whining.

Bredenkamp lost 220 pounds in 18 months without supplements, drugs, or surgery; and continues to keep it off. She is now a certified health coach who helps people get off the diet roller coaster and live healthier, more balanced lives.

One of her favorite tricks is to use zucchini as a substitute for pasta and Asian noodles. Shred the zucchini into ribbons and toss it with turkey meat and sauce for an easy stir fry or 'pasta.' Zucchini has far fewer carbs and calories and a lot of vitamins. Another trick is cauliflower. You can steam it and make it into a substitute for mashed potatoes. You can also make a cauliflower crust for pizza.
