Recipe: Blackened Fish Rub

Equal parts of:

· Black pepper

· Garlic powder

· Onion powder

· Paprika

· Cayenne Pepper

· Kosher Salt

Creamy Goat Cheese Polenta

· 3 cups chicken/vegetable stock

· 1 cup polenta (not instant)

· 1 tsp salt

· 2 oz. goat cheese

· 2 oz butter

· 1/2 cup heavy cream

Braised Kale

· 1 bunch kale (ribs removed)

· 1 cup chicken stock

· 2 each garlic cloves

· 1/4 cup sliced onion

· To Taste Salt and Pepper

Roasted Red Pepper Sauce

· 1 roasted red bell pepper

· 2 each garlic cloves

· 1/2 cup chicken stock

· 1 tsp red pepper flakes

· 1 tsp salt

· 1 tsp black pepper

· 1 tsp paprika

· 1 tsp cumin
