Kevin Pope’s Christmas Blarney Stones

Nothing says Christmas in the Pope house like Blarney Stones. For as long as I can remember, my grandma, and now my mom, made Blarney Stones <!–////–>for Christmas<!–////–>, and it is the only time of the year we eat them. What are they? Here’s how you make them.

1 box (or more) white cake mix
Finely ground unsalted peanuts

Prepare the cake mixes as directed. Once the cakes cool, cut them in 1 inch squares and let them sit overnight.

Prepare icing (make it a little thinner than you would for a normal cake).

Cover each square with icing, then roll in ground peanuts.
