ST. LOUIS (KTVI) - Turmeric is heralded as a wonder spice because of its health benefits.
Carol Hurst of the Old Spice Shop in St. Charles discusses why turmeric gets this reputation.
Boil 4 cups water. Add 1 tsp ground turmeric. Simmer for 10 minutes. Strain and add honey or lemon to taste. Optional, add ground ginger to the simmering mixture.
Grilled Moroccan Chicken
1-1/2 lb boneless skinless chicken tenderloins
1/4 cup extra virgin olive oil
1 teaspoon salt (Celtic salt recommended for mineral qualities)
3 garlic cloves, minced (can substitute 3 tsp garlic powder)
2 teaspoons Hungarian paprika
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon ground dry ginger
1/4 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cayenne pepper
1. Mix all ingredients inside 1 gallon zip-lock bag. Press air out of the bag and seal it shut. Massage the bag around to marinade the chicken better until evenly coated. Place the bag in the refrigerator and let the chicken marinate for 5-6 hours.
2.Preheat grill on high, then reduce to medium . Place marinated chicken on grill, drizzle marinade over top. Grill, covered, for 2-3 minutes per side. Do not overcook.
3. Serve with couscous/pasta/potatoes and vegetables.
