(KTVI)-This time of year, the calendar is full of holiday gatherings. But if you are following a vegetarian or vegan diet, what will you bring or what will you serve? Caryn Dugan, better known as STLVegGirl, is a Certified Food for Life Instructor and a Plant-Based Nutrition Counselor. This holiday season she has been posting a vegan appetizer recipe each day to help you prepare for your Christmas happy hours, work pot lucks, and family get togethers.
In many houses, a favorite holiday party snack is the mini-rye bread pizza. In an effort to keep the nostalgia, but lose the extra fat and 100% of the cholesterol, here is a vegan version.
Mini Rye Bread Pizzas
· 2 packages of Gimmie Lean Beef or Sausage (or other ground meat substitute)
· 2 ½ TBS vegan butter (I like Earth Balance)
· 3 TBS whole wheat flour
· 1 ½ C unsweetened coconut milk
· 1 tsp garlic powder
· Ground pepper
· Mini Ryes, toasted
In a large non-stick pan, over medium high heat, begin to cook the meat. You’ll need to break it apart with a wooden spoon as it cooks. Once the edges begin to crisp up, transfer to a plate. Bring the heat down to medium and add in the butter then whisk in the flour to create a roux. Next, continue to whisk and add in the coconut milk. Once it in smooth, add back in your meat, garlic powder and ground pepper. As your meat is now incorporated into the roux, add in your cheese shreds. Once melted, scoop a tablespoon of the mixture on to each toasted mini rye and serve.
If you are taking this to a party, transfer the mixture to a glass bowl and cover. Toast your mini ryes at home. Re-heat on stove top or briefly in a microwave and then assemble and serve.
