ST. LOUIS – Chef de Cuisine Nathan Sandkop is looking forward to next year’s honey harvest to sweeten dishes at the Chase Park Plaza.
Until then, he uses honey — liberally — in dishes like the flash fried wings, charcuterie board and truffles.
Right now, the Chase gets help from Issabee’s Beekeeping Supplies to cultivate their own honey on the roof of the hotel. Executive chef Gunter Weber hopes to have at least 50 pounds of honey for the kitchen and hotel gifts by next year.
