Swansea Improvement Hall prepping for Wednesday’s fish fry

SWANSEA, IL (KTVI) – If you were to count up the cod Susan Walter has cut, well it'd be enough to fill this freezer in one morning, about 800 pounds worth.

'Thaw it out in cold water, and then we cut,' says Susan Walter, Owner Swansea Fish Stand.

Tuesday afternoon Walter was busy filleting cod for tomorrow's Ash Wednesday and the start of the Lenten season.

'Cod is the number one selling fish,' says Walter. 'This is Cod country here. Then the second fish the most we sell would be the ocean walleye and after that are the catfish fillets and then the ocean blue gill.'

Walter's fish comes from Sweitzer foods out of East St. Louis. And her fish stand has become a well-known Metro East secret that's taken over the nearby Swansea improvement hall and parking lot.

'Friday night we do fill the hall and the bar so it's not a big secret anymore,' says Walter.

'Cause it's so good here we have to open a second bar in the hall that the fish people bring in,' says Quentin Lauer, President Swansea Improvement.

That sounds like a good combination, like fried fish and Cole slaw.
